From the ancient, pre-phylloxera vines of the Cavanera Etnea Estate on the northeastern slopes of Mount Etna, Signum Ætnæ is a rare and expressive Riserva that captures the essence of Sicily’s most iconic volcano.
Crafted exclusively from Nerello Mascalese, this wine comes from bush-trained (Alberello Etneo) vines rooted in loamy-sandy, volcanic soils at 750 meters above sea level. The vineyard’s exceptional drainage and high elevation contribute to the wine’s remarkable freshness, complexity, and aging potential.
The grapes are hand-harvested in late October, fermented at controlled temperatures (24–25°C) with a 10–12 day maceration and complete malolactic fermentation. Aged for two years in fine Tronçais oak barrels—60% in 700 L and 40% in 1300 L—and refined a further 18 months in bottle, this Riserva reveals both power and finesse.
Only 3,500 bottles of the 2022 vintage were produced, preserving the integrity and exclusivity of this wine, first made in 2014.
